i think it could be..
but coffee w/ water has its best result when you make it as a background color for a plain white paper

Coffee will stain the paper and make for a very nice coloration.
Just be advised that coffee is acidic and could accelerate decay of paper and color.
Try using a low acidic coffee and acid free paper to help mitigate this.

Coffee can definitely be used. You can make different shades of brown depending on how much water you use. There are artists who work using things other than just regular water colour paints. Take a look at Marcel Dzama if you’re curious. He paints using rootbeer.
